Vegetarians are pale and vegetable recipes lack lustre, this stereotype has taken a long time to die out. Vegetarian cuisine is not boring at all and gone are the days when it was limited to just boiled greens and rice. There are hundreds of vegetables, grains, and pulses for imaginative and nutritional food. Medical studies are proving that being vegetarian is good for your health and ailments like cancer, obesity, diabetes and high blood pressure stay away at large. Fresh vegetables are good source of vitamins and minerals.

Vegetarian movement has taken the lead and now a days restaurants can’t afford to go without vegetarian dishes on the menu. You can bring this excitement to your kitchen and cook fantastic vegetarian meals in less than half an hour.

A simple tasty stir fry recipe

5 tbsp – Oil

1 tbsp – Garlic chopped

1 No – Green chilli finely chopped

100 gms – Green pepper finely sliced

100 gms – Mushrooms sliced

100 gms – Carrot sliced

100 gms – Baby corns sliced

100 gms – Bean curd

2 No – Spring onion stems

¼ cup – Almonds and Cashewntus

1 tbsp – Soy sauce

1 tbsp – Vinegar

1/8 tsp – Sugar

1 tsp – Cornflour in water

Salt to taste

Pepper to taste

Heat oil in a pan and fry the bean curd till golden and set aside. In the same pan add nuts, garlic and peppers and briefly fry them. Add the remaining vegetables and continue to on a high flame for another 3-4 mins. Add the seasonings and simmer for 5-7 mins. Increase heat and add the cornflour mixture and cook uncovered for another 2-3 mins. Garnish with greens and serve.
